THE OUTPOST BAR STORY

BORN FROM THE BONES OF BROULEE...

Outpost Bar was built from the ground up — literally — by locals with a vision. At the heart of it is Lee “Bones” Louttit — Owner, Designer, and one half of P & L Louttit Total Construction Services, the crew behind Train Street Central, where Outpost Bar calls home.

From the start, Lee and Peter knew this place needed more than bricks and mortar — it needed a bar. A space that felt alive.

​

With the help of her husband Peter tackling the fit-out and construction logistics, and daughter Casie — the all-rounder behind the scenes juggling everything from tech integrations and marketing to the website and accounts — Lee's Outpost dream took shape.

Lee’s vision was simple: shine a light on Australian liquor, celebrate local producers, and create a place where people could slow down, share a yarn, and get a little lost. A spot for the drinks you know — and the ones you’ll be glad you tried. Plates made to share, savour, and suit all appetites.

With Chef Pete Compton — former Owner and Chef of The River Restaurant in Moruya — now leading the kitchen, that vision of bold, thoughtful flavour has come to life.

​

Outpost — named for what it is: a haven for locals, a stop for travellers, and a home for good company.
